Head chef
I put this list together based on my personal tastes. I’ve left out a list of coffee spots because I don’t usually go to a specific place just to have one; I only drink coffee in the morning, so if I were to recommend a place for coffee, I’d simply suggest the spots where I have breakfast
FECA serves a magnificent Spanish omelet—creamy with the potatoes cooked *al dente*—and if you ask, they’ll make it with a spicy kick
EL ESTRIBO is a neighborhood cocktail bar near Goya that I’ve been visiting for 20 years; it’s small with a simple menu, but the owner, André, uses his vast selection of spirits to mix up incredible cocktails
LA ARDOSA is a classic; having a draft beer or a vermouth paired with their traditional *pinchos* makes the trip into central Madrid well worth it
BRUTALISTA—I go there almost every month. Pablo’s mastery of *escabeche* (pickled/marinated dishes) is truly exceptional. The best approach is to put yourself in his hands for both food and drink; it’s a sure bet
GIOIA blends traditional Italian cuisine with creative, signature dishes, all accompanied by excellent service. Keep an eye out for the tableside carbonara and their seasonal truffle menus
