Juan Sahuquillo
Chef
Madrid has become one of the most complete gastronomic cities in Europe because it combines tradition, cultural diversity and a new generation of professionals with a very strong identity. What I value most today is not luxury itself, but places with consistency, personality and a clear understanding of product and hospitality
The city has evolved enormously in recent years across every category — bakeries, specialty coffee, casual dining, cocktail bars and fine dining — and there is a much more mature attention to detail than before. You can feel that many establishments are now thinking not only about food or drinks, but about the full experience, from atmosphere and service to sourcing and execution
What makes Madrid especially interesting right now is that sophistication still feels relaxed and natural. The best places usually share the same qualities: honesty, strong technical foundations, good taste and a genuine passion for making people feel comfortable
